Worlds Best Pumpkin Bread
Moist, easy to make and freezes beautifully. Another holiday and gift giving staple

Wet Ingredients. Whisk together in a large bowl.
1 cup salad oil (not olive)
2/3 cup water (two thirds)
3 cups sugar
4 eggs
2 cups pumpkin

Dry Ingredients Whisk together in a small bowl.
1 tsp cinnamon
½ tsp nutmeg
1 ½ tsp salt
2 tsp baking soda
3 ½ cups flour
1 cup chopped pecans 

Stir the dry ingredients into the wet ingredients. Mix well. Pour into individual mini loaf pans (approximately 4-5) that have been sprayed with cooking spray. Bake at 350F for 55 minutes.  Cool on wire racks.

One mini loaf serves 4. Recipe makes 5-6 mini loaves.
